Tate & Lyle icing sugar, 500g. Sugar ground to a fine powder, and the only sugar that works for icing, buttercream and glazes.
The reason is dissolution. Icing sugar disappears instantly into liquid or butter; caster does not, and the result is gritty in a way that cannot be rescued by beating it longer.
Sift it before use without exception. It compacts in the bag and the lumps will not beat out, which is the most common cause of a disappointing buttercream.
