Tate & Lyle demerara sugar, 500g. Large golden crystals with a light molasses note, bought as much for texture as for sweetness.
It dissolves slowly, which is why it is the wrong sugar for a sponge and the right one for anything where you want the crystals to survive. Over a crumble it gives a crunchy top; on a flapjack or a banana loaf it does the same.
It also has more flavour than white sugar, which comes through in gingerbread, parkin and anything with treacle in it.
