Tate & Lyle caster sugar, 1kg. Caster is milled finer than granulated, which is not a cosmetic difference: the smaller crystals dissolve faster, and that matters a great deal in baking.
Creaming butter and sugar for a sponge works properly with caster and badly with granulated, since the larger crystals do not break down into the butter. Meringues need caster for the same reason.
It is also the better sugar for anything cold, like a fruit salad or a cocktail, where granulated would sit at the bottom undissolved.
