Siúcra demerara sugar, 500g. Large golden crystals with a light molasses flavour, and a sugar bought as much for its texture as for its sweetness.
It does not dissolve quickly, which is a fault in tea and a virtue everywhere else. Sprinkled over a crumble it stays as visible crystals and gives a crunch; on top of a cake or a flapjack it does the same.
