Amoy dark soy sauce, 150ml. Dark soy is aged longer than light and often has molasses added, which makes it thicker, sweeter and considerably darker in colour.

It is used for colour and depth rather than for salt. In a braise, a red-cooked dish or a stir fry that should look glossy and dark, dark soy is what does that. Using light soy instead gives you the same saltiness and none of the colour.

A little goes a long way, and too much will make a dish muddy and bitter.
